Savoring the Flavoring of Pumpkin

I love growing things that we can also eat, but I’m not much of a cook.  I *can* cook.  It just doesn’t hold my interest. Luckily for me I married a man who knows his way around the kitchen.

During the holidays, I get to fuss over the table settings while he stays busy in the kitchen.  I love arranging flowers, making place cards, lighting candles, and seeing that our guests feel at home.

Our Canadian friends celebrate their Thanksgiving holiday this Monday, October 8th.  In the US, we celebrate the third Thursday of November, so still plenty of planning weeks ahead.

Sweet pumpkin pie is a traditional favorite, but not everyone likes the texture.  I’ve found a few interesting alternatives to try this year.  I’ll be running them by the resident chef to see what he thinks.  I wanted to share them with you, too.  Do you have a favorite pumpkin recipe of your own? Please let us know in the comments, below.

Pumpkin Desserts

Honey Pumpkin Ice Cream Pie

Deborah, at Romancing the Bee shared a recipe for this sweet sensation last week.  She says it’s quick and easy, and judging by the ingredients, it will go down as smooth as honey.

Vegan Pumpkin Muffins

I can almost smell the allspice just looking at the photo.  These seasonal goodies would be a hit at the office potluck or tucked into a tin as a hostess gift.

Pumpkin Carrot Swirl Bars

You can never have too much orange.  These tasty treats combine pumpkins and carrots for a vitamin-rich dessert.  This is a great make-ahead recipe and a fun treat to pack in a school lunch.

  1. Aargh! Such great recipes to try out and my diet starts today – bad timing on my part or what?! I’m currently sitting here convincing myself that it won’t do me any harm to try the muffin recipe, it looks very healthy after all….

  2. I think the pumpkin carrot swirl bars sound delicious. I pretty much love anything pumpkin: pie, muffins, roasted pumpkin seeds!

  3. LOL, we do think alike…I’ve posted a pumpkin recipe today as well. Thank’s for your holiday wishes too. I peaked at the recipes, they do look delish. Do you figure out points for each ingredient? I still have my WW Turnaround Calculater and find it handy if the nutritional info is available. I cooked all day yesterday and went to a corn maze, lot’s of fun. Today I’m being spoilt and we’re off to dinner with Jim’s mom. I think I’m still on track except for the two generous glasses of wine yesterday…oh well, carpe diem!

    • Hurray for staying on track during the holidays. I started the week well, but did a bit of unraveling on Sunday. Tomorrow’s my day. I’ll let you know.

It sounds like you’ve had a fun holiday weekend. Does Jim’s mom live nearby?

    • Lucky thing my day is Thursday, weekdays are so much easier than weekends. Hey, is Columbus day a long weekend for you too? I just heard Ellen say ‘Happy Columbus Day’. Jim’s mom lives about 1.5 hours away but was visting in the city for the weekend.

      • Columbus Day is a federal holiday here, but no longer a school holiday. So, the banks are closed but not much else.

I had a terrible weight in day, today. I’ll send more details privately. I agree…weekdays are easier.
